Suffering Fools Gladly

I admit that I’d be better off eating ‘ful medames’, which is an Egyptian dish of fava beans, olive oil, and herbs.  This would be the wise choice: to opt for the fiber, phosphorus, and folic acid.  But I’m a fool for dessert, with a special fixation on whipped cream.  So far, I’ve resisted the temptation to serve just a bowl of it for dessert.  But it comes close to that with the British ‘fool’.  In its sparest incarnation, it consists merely of whipped cream and fruit (stewed or not).  More complicated fools require meringue and gelatin.  I think I prefer the former, it seems truer to its name.….a simple fool.

Recipe:  Coffee Raspberry Fool

1 c whipping cream
3 Tbsp brown sugar
1 Tbsp instant espresso (or coffee)
½ tsp vanilla extract
1 c raspberries

Whisk brown sugar and instant coffee into a small amount of the cream to dissolve.
Start to whip remaining cream, stop and add the coffee mix, and resume whipping to soft peaks.
Spoon into dishes, layering with raspberries.
This makes enough for 4 small portions.

Rather a Large Portion of Coffee Raspberry Fool

Then there’s ‘prune whip’, which is something I associate with the 50’s and Betty Crocker.  It really amounts to the same thing as a fool.

Recipe:  Prune Whip

½ c pitted prunes
1 Tbsp brown sugar
½ c water
1 c whipping cream
1-2 Tbsp brown sugar
½ tsp vanilla extract

Bring prunes, sugar, and water to a boil, turn down heat and simmer (covered) until soft, about 15 min.
Cool and then purée in a mini food processor.
Whip cream with sugar and vanilla to soft peaks.
Fold about half of the whipped cream into puréed prunes and then layer this with the remaining whipped cream in dishes.
Serves 4 temperate appetites.
